Lemon Rice (Elumichai Sadam)
A tangy, flavorful rice dish that needs just a few ingredients and can be made in 15–20 minutes.
Ingredients:
Cooked rice 1 cup (it is better when cooled)
Lemon -1 (in medium size)
Mustard seeds- 1/2 tsp
Urad dal- 1 tsp
Chana dal- 1 tsp
Green chilli one or two (slit)
Dried red chilli-1
Curry leaves- less
Turmeric powder- 1/4 tsp
Hing (asafoetida) - a pinch
Salt, to taste
Oil- 1 tbsp
Roasted peanuts or cashews- optional (one handful)
Method:
- Heat oil on a pan.
- Add some mustard seeds and have them splutter.
- Add urad dal, chana dal and green chillies along with dry red chilli. Stir fry till dals become golden.
- Add curry leaves, turmeric powder and some hing. Mix well.
- Switch off the flame, and press the lemon juice into the tempering. Mix.
- Now pour in the cooked rice, and the salt. Stir at a low speed until the rice becomes coated well.
Ready to Serve!
Serve hot or pack it in a lunch box. Tastes great with papad or pickle.
