Spicy Kanava (Squid) Masala Recipe
Ingredients:
Kanava (Squid) – 500 grams (cleaned and cut into small pieces)
Onion – 2 medium, finely chopped
Tomato – 1 large, chopped
Ginger-garlic paste – 1 tablespoon
Green chillies – 2, slit
Turmeric powder – ½ teaspoon
Red chilli powder – 1 teaspoon (adjust to taste)
Coriander powder – 1½ teaspoons
Curry leaves – a sprig
Mustard seeds – ½ teaspoon
Fennel seeds – ½ teaspoon (optional)
Coconut oil – 2 tablespoons (or any cooking oil)
Salt – to taste
Water – as needed
Coriander leaves – a few, chopped (for garnish)
Preparation Method:
Clean the Kanava:
Wash the squid thoroughly. Remove the skin, beak, and inner parts. Cut into rings or bite-size pieces.
Boil the squid (optional):
In a pan, add the squid with a little turmeric and salt. Cook covered for about 15 minutes. Squid releases water, so no need to add much. Do not overcook—it becomes rubbery. Keep it aside.
Prepare the masala:
Heat oil in a pan. Add mustard seeds and let them splutter. Add fennel seeds, then curry leaves.
Sauté onion & masala:
Add chopped onions and green chillies. Sauté until golden. Add ginger-garlic paste and sauté until raw smell goes.
Add tomatoes and spices:
Add chopped tomatoes. Cook till soft and mushy. Then add turmeric, chilli, coriander powder, and salt. Mix well.
Combine squid and masala:
Add the cooked squid along with any stock left. Mix well so the masala coats the pieces.
Cook together:
Simmer for 7 minutes until masala thickens and the squid absorbs the flavours. Sprinkle garam masala.
Garnish and serve:
Turn off the flame, garnish with chopped coriander leaves, and serve hot.
Served Suggestion:
Serve hot with steamed rice, dosa,Chapati.
