Easy Vegetable Upma Recipe (South Indian Breakfast)
A healthy, light, and quick South Indian breakfast made with rava (sooji/semolina), vegetables, and minimal spices.

Ingredients:
Rava (sooji/semolina)- 1 cup
Water- 2 1/2 cups
Onion - 1 (chopped in small pieces)
Mixed vegetables Mixed vegetables 1 piece- carrot 1 piece-beans 1 piece-peas- optional 1 piece= 1/ 2 cup
green chilli- 1 or 2 (slit)
Ginger -small pc
Mustard seeds- 1/2 tsp
Urad dal 1 tsp
Curry leaves- little
Salt- to taste
Oil - 1/2tbsp
Ghee 1 tsp- optional
Coriander leaves- to garnish
Cashews - small amounts (optional and roasted)
Instructions:
- Dry roast the rava in a pan on low flame until it turns slightly golden. Keep aside.
- In the same pan, heat oil and add mustard seeds. Let them splutter.
- Add urad dal, curry leaves, chopped ginger, and green chillies. Sauté for a minute.
- Add chopped onion and cook till soft.
- Add the chopped vegetables and sauté for 2–3 minutes. Pour in the water and add salt.
- Once water boils, slowly add roasted rava while stirring continuously.
- Cook on low flame until the mixture thickens and rava is fully cooked.
- Add ghee for extra flavour. Garnish with coriander and roasted cashews.
