1. Masala Omelette with Toast

This one’s my go-to when I’m too tired to think.


Ingredients:

  • 2 eggs
  • 1 chopped onion
  • 1 green chilli (optional)
  • Salt, turmeric, and a pinch of red chilli powder
  • Coriander leaves
  • 2 slices of bread

Method:

  • Beat the eggs with all ingredients. Pour on a hot pan with a little oil, cook till golden on both sides. Toast the bread, and you’re sorted.
Pro tip: Add some cheese or leftover veggies for extra taste.

2. Vegetable Maggi with a Twist

Maggi is a lifesaver, no? But let’s make it a little healthier and tastier.



Ingredients:
  • packet Maggi noodles
  • Mixed vegetables (carrot, capsicum, peas)
  • ½ tsp garam masala
  • A pinch of turmeric
Method:
Sauté vegetables in a pan, add water and Maggi masala, then add noodles. Cook for 2–3 minutes.
Add a boiled egg on top, and it becomes a full meal.

3. Paneer Bhurji

Quick, protein-packed, and full of flavour.


Ingredients:

  • 200g paneer (grated or crumbled)
  • 1 chopped onion and tomato
  • Green chilli, salt, turmeric, and garam masala

Method:

Sauté onions, add tomatoes and spices. Add paneer, cook for 4–5 minutes, and serve hot with roti or toast.
