Ingredients | தேவையான பொருட்கள்
  • For Mint Paste:
  • Pudina (Mint leaves) – 1 cup
  • Coriander leaves – ½ cup
  • Green chilli – 2 to 3 (adjust to spice level)
  • Ginger – 1 inch piece
  • Garlic – 4 pods
  • Small onion – 5 to 6 (optional)
  • Lemon juice – 1 tsp (optional)
  • Water – as needed to grind
For Tempering:
  • Cooked rice – 2 cups (preferably cooled rice)
  • Oil – 2 tbsp
  • Mustard seeds – ½ tsp
  • Urad dal – ½ tsp
  • Chana dal – 1 tsp
  • Cashews – 6 to 8 (optional)
  • Curry leaves – few
  • Onion – 1 (sliced)
  • Salt – as required
How to Make Pudina Rice | செய்முறை
  • Cook the Rice
  • First, cook rice and spread it on a plate to cool. Use little oil to prevent sticking.
  • Prepare Mint Paste
  • Grind pudina, coriander, green chilli, ginger, garlic, onion and lemon juice into a smooth paste with little water.
  • Temper the Spices
  • In a pan, heat oil. Add mustard seeds, urad dal, chana dal, and cashews. Let them turn golden.
  • Add Onion & Curry Leaves
  • Add sliced onions and curry leaves. Sauté until onions turn soft.
  • Add Mint Paste
  • Now add the ground mint paste and cook it on medium flame until the raw smell goes (about 5-7 mins). Add salt.
  • Mix with Rice
  • Add the cooled rice and mix gently until well combined. Check for salt.
  • Ready to Serve!
  • Serve hot with papad, curd, or potato fry.
